Oats Biscotti (gluten-free)

I love biscotti, I could eat the whole box(store bought) in 2 sittings... hahhhaaa... but well my metabolism no longer allows that :). To satisfy my cravings, I really needed a tasty, healthy, gluten free biscotti recipe. After reading various recipes, I was inspired to come with my own version of biscotti with a hint on Indian spice :) 

I totally loved the biscotti I made but to be honest I was a little nervous if V would like it or not. ..well his verdict is what I wait for :) Here's our conversation..
me: I made Oats Biscotti
V: Biscotti with Oats (with a frowned look)
me: Try one, if you don't like I will have the entire batch as I loved it

Saying that I went to make some masala chai to go with biscotti for about 10 minutes. I went back to table with tea to see only 2 biscotti left...duhhh.. I look at V and he says they are awesome, please get few more from the kitchen I will have them with tea. With a grumpy face, I said that was all I made. I will make few more tomorrow :) Well long story short, V loved it. So did I.

So here's this awesome recipe for you guys...

Ingredients:
  1. Old Fashioned Oats - 1.5 cups 
  2. Cardamom (whole) - 2
  3. Coconut Oil - 2 tsp
  4. Baking Powder - 1.5 tsp
  5. Egg - 1
  6. Nuts or Chocolate chips (your choice), I used cranberries, almonds, pistachios and walnuts
Grind oats and cardamom into flour. I used magic bullet to convert oats into flour.  In a bowl, whisk egg, coconut oil as set aside. Add baking powder to the oats cardamom flour and mix well. Now pour the liquid into the oats powder to form as nice dough (see below).


Here are the dry fruits/ nuts that I roughly chopped and added.



Fold in the dry fruits/nuts well in the dough.


Preheat oven at 350F. Line your tray with parchment paper. If you using aluminum foil, make sure its greased with oil or butter.  Place your dough on the parchment paper in a 1 inch high rectangle log and bake for 35 mins (turning to the other side at half time, please be very careful when doing this to avoid any breaking). After 35 mins, take out of the oven and let it cool completely.  When cooled, cut into approximately 1 inch thick. Place on the baking tray and bake again at 275 F for 15 mins by turning it other side at half time. Let it cool. Enjoy!!!!
