Canned Sardines cooked Indian way

Canned Sardines - 2
Onions (medium size) - 1/2 finely chopped
Black mustard seeds - 1/4 tsp
Cumin seeds (Jeers) - 1/4 tsp
Plum tomato - 1 (grind)
Black pepper powder - 1/4 tsp (adjust as per your spice level)
Red Chili powder - 1/4 tsp (adjust as per your spice level)
Garlic - 3 cloves finely minced
Garlic - 1/2 inch finely minced
Coconut Oil or Olive Oil - 1 tbsp
Cilantro - finely chopped optional
Salt per taste

Heat a non-stick pan on medium low. Add mustard seeds and when it starts spluttering add cumin seeds, ginger and garlic. Saute for few seconds till garlic gets nice golden color. Now add finely chopped onions and saute it till its translucent. Now add pepper powder and chili powder and then add tomato pulp. When you notice the gravy is reduced to half, add canned sardines (don't add oil from the cans). Let the fish simmer in the gravy for 1 minute of both sides and turn off the heat. Sprinkle some cilantro. Enjoy!
