Almond Coconut Cookies (Gluten-free)

Almond Coconut Cookies
I love these cookies. They are healthy and filling.

Almonds (whole) - 1 cup made as coarse flour (you can use almond flour directly too)
Sweetened Coconut Shaves - 2 to 3 tsps
Baking Powder - 1/8 tsp
Egg - 1
Brown Sugar - 2 tsps (adjust according to sweet level)
Coconut Oil - 1.5 tsps
Chocolate Chips - 1/3 cup (I used dark chocolate baking chips)
  • Mix all the above except Chocolate chips into a cookie dough.
  • Make good sized portions, makes decent 9 cookies.
  • Bake at 350F for 13-15 mins
  • Once baked, let the cookies cool down.
  • Melt chocolate chips (for 2 mins in microwave - be careful as it may burn, you need to monitor; alternatively use double broiler melting method).
  • Coat the cookies and let it cool or refrigerate.
