Masala Asparagus

"Grilled Asparagus is so boring.. we should make something else that goes with baked salmon" said I. On hearing this V said "I think I know just what you like.." 
With some roasted peanuts and regular spices came up with a quick and tasty way to make asparagus. A perfect side for meat/fish. And yeah it tastes very close to "Gutti Vankaya  masala / Masala Baingan's masala".
Ingredients for 2:
Asparagus - 6 nos (cleaned and cut to desired size)
Onion - 1 small or 1/2 big (pureed)
Tomato - 1 (pureed)
Roasted Peanut powder - 1/3 cup
Coriander Powder - 1.5 tsp
Turmeric  - 1/3 tsp
Red Chilli Powder - 2 tsp (increase or decrease per spice level)
Ginger Garlic paste - 3/4 tsp
Tamarind Juice/ Extract (concentrated) - 1 tsp (increase or decrease per taste level)
Sugar - 1/4 tsp
Oil - 2 tsp
Lime - 1/2 (juice) optional
Salt as needed
  • Heat a pan on medium, add oil. Add Onion paste (careful it may spill), let it cook till the raw onion smell disappears
  • Add Turmeric, coriander powder, Red Chili powder andGinger - Garlic paste and stir.
  • Next in line is Tomato puree. When the mixture starts to thicken add Asparagus and sautee.
  • Now add Tamarind Extract, Roasted Peanut powder, salt per taste and let it cook till it thicken or till asparagus is just done right (do not overcook asparagus). Add sugar mix well and add lime and switch off the heat.
