Mango Cake...yum!!!
This was a long waited post. I don't have track of how many times I made this cake, but not once did we wait to get a picture :) This is just irresistible.
And for all you Mango Lovers... this is heaven! you heard it right.. this is heaven.
Ingredients
For Cake
I followed white cake recipe from Joyofbaking. Alternatively you can use any store bought white/yellow cake mix. Bake cake (bake it to 2 batches to have 2 layers).
For Whip-cream
For Mango Jelly
- Mango Puree - 3 tsps from can / puree of 1/2 mango
- Gelatine - 1/2 pack
- Water (warm) - 1 tbsp
Mix the above ingredients and let it settle to solidify. Cut into small pieces.

For Whip-cream
- Heavy Cream - half pint
- Sugar - 4 tsps can increase if you like more sweet
- Mango Puree - 5 tsps from can / puree of one whole mango
Whip heavy cream and sugar together and when you have the whp cream ready fold in the mango puree and freeze it till needed.- Sugar - 4 tsps can increase if you like more sweet
- Mango Puree - 5 tsps from can / puree of one whole mango
For Mango Jelly
- Mango Puree - 3 tsps from can / puree of 1/2 mango
- Gelatine - 1/2 pack
- Water (warm) - 1 tbsp
Final Step
- Once the cake is cool, place the first layer.
- Fold in the jelly pieces in the mango whip cream.
- Layer it on the cake.
- Now place the next cake layer and repeat adding the whip-cream.
- Decorate as desired.
- Let it freeze for 30 mins and its good to go :)
