Pepper Brinjal Fry

Ingredients
  1. 2-3 tsps Oil
  2. 1/2 tsp Mustard Seeds
  3. 1/2 tsp Cumin Seeds/Jeera
  4. 1 tsp Chana dal
  5. 1 tsp Urad dal
  6. 1 Red Chilli
  7. Curry leaves
  8. Ginger finely chopped (optional)
  9. Garlic finely chopped (optional)
  10. 1 Onion finely chopped (small)
  11. 8-10 nos Brinjal
  12. 2-3 tsp Black Pepper powder **you can increase or decrease as per your taste
  13. 1/2 Lime juice
  14. Salt per taste
  15. Cilantro/Coriander leaves to Garnish (optional)
This is one of the most easiest recipes and thanks to my mom for the recipe. I highly recommend using non-stick pan to make this.
  • Heat the pan on medium flame and add oil.
  • When the oil is hot, add ingredients 2 through 7. Saute them.
  • When the chana and urad dals start to change color, add ginger and garlic. 
  • Add onions and suate till it turns translucent.
  • Now add chopped brinjals. Immediately add pepper and salt per taste and stir them.
  • Now reduce the flame to low-medium and cover the pan.
  • Let it cook for 5-6 mins and then gently turn the brinjals and cover the lid for around 6-7mins.
  • When you think its cooked take it off the stove. Add lime juice and coriander leaves and toss them and its ready to serve.
