Ingredients
- 2-3 tsps Oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds/Jeera
- 1 tsp Chana dal
- 1 tsp Urad dal
- 1 Red Chilli
- Curry leaves
- Ginger finely chopped (optional)
- Garlic finely chopped (optional)
- 1 Onion finely chopped (small)
- 8-10 nos Brinjal
- 2-3 tsp Black Pepper powder **you can increase or decrease as per your taste
- 1/2 Lime juice
- Salt per taste
- Cilantro/Coriander leaves to Garnish (optional)
This is one of the most easiest recipes and thanks to my mom for the recipe. I highly recommend using non-stick pan to make this.
- Heat the pan on medium flame and add oil.
- When the oil is hot, add ingredients 2 through 7. Saute them.
- When the chana and urad dals start to change color, add ginger and garlic.
- Add onions and suate till it turns translucent.
- Now add chopped brinjals. Immediately add pepper and salt per taste and stir them.
- Now reduce the flame to low-medium and cover the pan.
- Let it cook for 5-6 mins and then gently turn the brinjals and cover the lid for around 6-7mins.
- When you think its cooked take it off the stove. Add lime juice and coriander leaves and toss them and its ready to serve.
