Ingredients:
Chicken - Skinless Boned - 1kgChopped CorianderChopped MintFried OnionsCinnamon stick - 2Cloves - 4Peppercorns - 7Bay Leaf - 5Black Jeera - 1.5 tspOil/ ButterBasmati Rice - 3 cupsWater to cook Rice - 4.5 cupsFor MarinationYogurt - 6 tspsGreen chillis - 10Ginger garlic paste - 1 tspRed Chilli Powder - 3 tspTurmeric - 1/2 tspCoriander Powder - 1.5 tspCumin Powder - 1/2 tspBlack Pepper powder - .5 tspJeera - 1 tspSalt as per taste
- Mix all ingredients under marination ingredients section and add cut chicken pieces to it. Keep the marinated chicken aside for 30mins.
- Wash the rice and soak in water for 30 mins. To the rice add oil (2tsps), black jeera, 2 bay leaves and salt as per taste and cook till 60% done.
- In a heavy botton vessel, add oil/butter, keep on medium flame. Once heated, add cinnamon, cloves, bay leaf, jeera, peppercorns.
- Now add the marinated chicken and cook till its 40-50% done.
- Once the chicken is 40-50% done - add the 60% cooked rice in layers stacked with fried onion, coriander and mint.
- After placing the top most layer, sprinkle color. Close the vessel with a tight lid and cook on medium-low flame for 20-25 mins. ENJOY!!!!
