Hyderabadi Dum Biryani

 Ingredients:
Chicken - Skinless Boned - 1kg
Chopped Coriander
Chopped Mint
Fried Onions
Cinnamon stick - 2
Cloves - 4
Peppercorns - 7
Bay Leaf - 5
Black Jeera - 1.5 tsp
Oil/ Butter
Basmati Rice - 3 cups
Water to cook Rice - 4.5 cups
For Marination
Yogurt - 6 tsps
Green chillis - 10
Ginger garlic paste - 1 tsp
Red Chilli Powder - 3 tsp
Turmeric - 1/2 tsp
Coriander Powder - 1.5 tsp
Cumin Powder - 1/2 tsp
Black Pepper powder - .5 tsp
Jeera - 1 tsp
Salt as per taste
  1. Mix all ingredients under marination ingredients section and add cut chicken pieces to it. Keep the marinated chicken aside for 30mins.
  2. Wash the rice and soak in water for 30 mins. To the rice add oil (2tsps), black jeera, 2 bay leaves and salt as per taste and cook till 60% done.
  3. In a heavy botton vessel, add oil/butter, keep on medium flame. Once heated, add cinnamon, cloves, bay leaf, jeera, peppercorns.
  4. Now add the marinated chicken and cook till its 40-50% done.
  5. Once the chicken is 40-50% done - add the 60% cooked rice in layers stacked with fried onion, coriander and mint.
  6. After placing the top most layer, sprinkle color. Close the vessel with a tight lid and cook on medium-low flame for 20-25 mins. ENJOY!!!!
