Quinoa Attu / Dosa / Savory Crepe

Ingredients
Quinoa - 1 cup
Urad Dal (white) - 1/2 cup, also known as Vigna mungo/Black gram/Black lentil
Fenugreek seeds - 1/s tsp
Salt lil
Oil as needed
Water as needed
Tava/Tawa
Batter
  1. Soak Quinoa and Urad dal in seperate vessels with water. Add fenugreek seeds in the urad dal vessel.
  2. Soak for atleast 6 hours.
  3. Grind them both separately into pancake like batter consistency. Once done mix them both together.
  4. Add a pinch of salt to the batter - stir in well and let it ferment.
Process to ferment 
Transfer the batter in a large vessel. When I poured the batter in the vessel if came to half of it. Cover it and keep in oven with light on for at least 8 hours. After which you will see the batter double the size. Batter is now ready to make dosas / pancakes.
  1. Heat a non-stick griddle/ tawa on medium flame. 
  2. When it is hot, pour a large spoonful of batter on it and spread quickly in a circular fashion. (Note: you don't have to make it very thin). 
  3. Add 1-2 tsps of oil around the batter. 
  4. Now add chopped onions/cilantro/chopped green chili on it - optional though.
  5. When the bottom side is done, flip to the other side and cook. 
  6. P.S  Quinoa dosa/crepe takes more time to get done than the normal dosa/ crepes so be patient.
