Grandma's Fish Fry

Ingredients
  1. Onion - 1/2 large or 1 small - chopped
  2. Curry leaver - 15 nos - chopped
  3. Red Chili powder - 2 tsp
  4. Coriander powder - 1 tsp
  5. Turmeric powder - 1/4 tsp
  6. Garam Masala powder - 1/2 tsp
  7. Cumin Powder - 1/4 tsp
  8. Gnger Garlic Paste - 1 tsp
  9. Lime juice - 1/2 lime
  10. Salt as per taste
  11. Cilantro - lil 
  12. Fish (any)  - 1 pound (slices)  I used King Fish
  13. Oil - 6 tbsp
  14. Pan - non stick preferred
I made fish fry N number of times and each time I made I always felt it was not as good as what Grandma used to make, though others loved it. And then finally this weekend I asked my Grannie to give me her recipe. She was so happy to share it. And then I followed her recipe ritually for this tasty fish fry. Grandma's secret was nothing but to add cooked onions and curry leaves paste in the marination. Simple right! But makes a lot of difference.
  1. Clean fish by washing it in cool water with turmeric and salt. Keep it aside.
  2. Heat pan. Add oil. When hot, add onions and curry leaves. Cook till onions are soft. Let it cool. Now grind and a make a paste of it.
  3. Make marination mixture by adding ingredients from 3 through 10 to the onion curry leaves paste.
  4. Now add fish to the marination. Rub it well with the mixture. 
  5. Wrap the marinated fish and let it sit for at least 1.5 hr either in refrigerator or out.
  6. After 1.5 hr - heat the pan on medium, when hot - add fish and some oil around. When the first side gets done - flip around, reduce flame to low medium and cook covered. You can add oil if you want. After approximately minute, remove the lid and flip the fish. Let it cook for  45 secs. If the slices are too thick, flip on sides to cook.
  7. Your tasty fish is ready. Enjoy!!
