Quinoa Chocolate Cake is my first recipe in the Quinoa Qoaw Qoaw section. I had my own apprehensions when I started making the recipe but I was totally wrong. This is the best chocolate cake I ever had. Hands down!
I was inspired by many recipes on the internet but I had to make few tweaks to get a healthy recipe.
Ingredients
Quinoa - 2/3 cup (uncooked)
Water - 1-1/3 cup
Brown Sugar - 1 cup
Whole Eggs - 3
Egg Yolk - 1
Butter - 1/2 cup
Chocolate chips - 1 cup (melted in double broiler - do not melt chocolate directly in heat as it may burn and taste bitter)
Vanilla essence - 1tsp
Baking Powder - 1-1/2 tsp
Baking Soda - 1/2 tsp

- Cook 2/3 cup Quinoa in 1-1/3 cup water for 12 minutes on medium flame till its done. When its cooked it will measure to about 2 cups cooked quinoa. Let it cool.
- Beat eggs, butter, vanilla essence together. Add cooled melted chocolate to it and mix well. Follow it with sugar, baking powder and baking soda and mix well.
- Now add the cooked quinoa and mix well for like 10 minutes with the electric mixer. This will ensure quinoa and the chocolate egg are mixed well.
- Bake at 350 F for 40 - 45 mins till cooked. Let it cool down. It tastes best with fresh whip cream or vanilla ice-cream or strawberry jam. Enjoy!!
