Quinoa Burger (Veggie)

I was craving for a healthy yet tasty veggie burger.  And then there was Quinoa packet, burger buns and potato on my kitchen table.... yayyiiii..... :)       
This recipe makes 2 burgers.

Ingredients
For Patties
Quinoa - 1/2 cup uncooked
Water - 1 cup
Potato (small) - 2 peeled 
Carrots - 2
Peas - 1/2 cup
Beans - 5 nos , You can add other veggies like broccoli etc too
Cilantro - little
Red Chili powder - 3/4 tsp
Green Chilis - 2 finely chopped
Coriander powder - 1 tsp
Lime juice - 1/2 tsp
Salt as per taste
Butter/Olive oil ~ 2 tsps

For Toppings
Lettuce -  2 leaves,  I had butter lettuce
Tomato - 2 slices
Avocado - 1/2 sliced in long strips
Onion - 1/2 cut in rounds
Chaat Masala - 1/3 tsp
Butter/Olive oil ~ 2 tsps
Salt as per taste

For Buns
Burger Buns - 2 (Set)
Butter/Olive oil ~ 2 tsps

For Sauce
Barbecue Sauce 
Hot Sauce , I used Franks' Red Hot Sauce

A. Burger Patties
  1. Cook Quinoa with water till its done. Takes about 12 mins.
  2. Boil, Potato, Carrots, Peas, Beans together. You can either do this in a pressure cooker or in microwave. I used microwave for this - i added  the chopped veggies in a microwave safe vessel. Sprinkled some water on the veggies, cover it and microwave for about 5-7 mins depending on your microwave to get all the veggies ready to be mashed.
  3. When both cooked quinoa and boiled veggies are cooled, mix and mash them together. Add Coriander Powder, Red Chili Powder, Green Chilis, Lime juice, Cilantro and salt as per taste. Mix them well. This mixture will now be easy to hold together and make into a patty. Be gentle.
  4. Heat a non-stick pan on low-medium and when hot add 2 tsps of butter and place the patties. It takes about 2 -3 mins on each side to get a nice brown color. 
I usually do not add eggs in patties or meat balls (keema muttis) for binding. As I don't like the smell of patties when they are cold if egg is added.

B. Caramelized Onions
Heat a pan on medium flame. Add 2 tsps of butter/olive oil, when hot add onions and saute. Add lil salt and very very lil sugar and saute. Onions turn into golden caramelized color thats when you know its ready. Swtich off the flame and sprinkle chaat masala on the onions.
C. Bun
i bought the burger buns. In the same pan where you sautéed onions, add 2 tsps on butter/oil and place the buns so that its gets lil warm and crispy inside.
D. Sauce
Mix Barbecue and Hot sauce in 60-40 proportion in a bowl.


E. Finally, YUMMMMMMMMM
On the bottom bun,add sauce (as much as you like). Place the patty, now if you don't mind too much sauce add sauce again, then top it off with onions, lettuce, tomato, avocado and place the top bun slice. Enjoy!!!

Within 15 secs there was this...  :)  

and in 30 secs there was nothing!

F. Preserving Patties
After step 3 from section A, refrigerate them for 3-4 hrs. Now take them out of refrigerator and individually wrap them in food plastic wrap. Place them all in a ziplock and keep them in de-freezer. Every-time you want to make one take out from de-freezer  and follow from step 4. Patties stay good for 2 weeks.
